The Ethiopian cuisine consists of various vegetable or meat side dishes and entrees, often prepared as a wat or thick stew. One or more servings of wat are placed upon a piece of injera, a large sourdough flatbread made out of fermented teff flour.
Dining takes place in a communal setting, where you will eat out of a common plate using your hands, and where no utensils are provided, except for the non-initiated and the non-adventurous upon request. The mesob, a woven round wicker basket that can sit as high as three or four feet tall has a lid, and when you remove it, there’s a place in the center for a tray of food. Each diner sits around on a small stool, about eight inches or more high, called a berchuma and everyone then eats from the common tray of food.
